- 4-5 boiled medium potatoes
- 1 tsp crushed red chilies
- 1 tsp salt or to taste
- ½ tsp crushed coriander seeds
- 1 tsp cumin powder
- 1 tsp chicken powder (optional)
- ½ tsp chaat masala
- 2 tsp cornflour
- 2-3 tps freshly chopped coriander
Dough Ingredients
- 2 cups sifted all-purpose flour
- 1 cup sifted maize flour
- 1 tsp salt or to taste
- 1 tsp cumin seeds
- ½ tsp carom seeds
- 3 tsp melted butter
- 1 & ½ cup water
- 1 egg whisked
- Sesame seeds or breadcrumbs
- Oil for air frying
Directions:
Make the potato filling:
- Use a masher to thoroughly mash the boiling potatoes in a bowl.
- Add salt, chaat masala, cornflour, fresh coriander, cumin powder, chicken powder (if using), crushed red chilies, and coriander seeds.
- Mix well and set aside.
Taco dough preparation:
- All-purpose flour, maize flour, salt, cumin seeds, and carom seeds should be combined in a bowl. Mix thoroughly.
- Add clarified butter should, then crumble the mixture.
- Gradually add water while mixing well to create dough.
- The dough should rise for 30 minutes after being covered and oiled with melted clarified butter.
- Do sufficient kneading to make the smooth dough.
- Make two halves of the dough. Roll out one portion with a rolling pin after forming a smooth ball out of it.
- Cut the dough into rounds using a round cutter (3.5 inches in diameter).
- The rounds should be forked, then brushed with beaten egg.
- Cook the taco samosas in a hot air fryer at 180°C for 18 to 20 minutes, turning them over after 10 minutes.

Ingredients:
- 1 tps ginger-garlic paste
- Lemon juice, 2 teaspoons
- Tandoori masala, 1 & 1/2 teaspoons
- Chicken fillet, 300g
- Cooking oil, 2 tablespoons
- 3 tablespoons of butter
- Chopped 1 big onion
- 1 teaspoon of crushed garlic
- 2 chopped green chilies
- 2 tablespoons of all-purpose flour
- Olper’s milk, 1/2 cup
- Olper’s cream, 1/2 cup
- 1 teaspoon of crushed red chili peppers, a teaspoon of salt, or as desired
- 1 teaspoon crushed cumin seeds
- 1 tps soy sauce
- 1/2 tsp paprika powder
- 1/2 tps spoons finely chopped fresh coriander
- Puff pastry, 500g
- A single-whisked egg
Directions:
- Combine tandoori masala, lemon juice, and ginger-garlic paste in a bowl.
- Apply the mixture to the chicken fillet, cover it, and let it marinate for 15 minutes.
- Then add a marinated fillet to a frying pan with hot cooking oil, cover with the marinated remains, and cook for 3 to 4 minutes on each side over medium heat. Cook with the lid on for 6 to 8 minutes on a low burner, then move to a high flame and cook until it dries.
- Allow the fillet to cool, then use a fork to shred it and set it aside.
- Melt butter in the same frying pan.
- Add the minced onion and cook it until it is transparent.
- Stir in the green chilies.
- Mix thoroughly after adding crushed garlic.
- Add all-purpose flour, then simmer for one minute
- Add milk and stir while cooking until thick.
- After turning off the flame, stir in the cream.
- Turn on the flame and then add salt, paprika powder, soy sauce, crushed red pepper, cumin seeds, and fresh coriander. Combine and simmer for one to two minutes.
- Add the chicken shreds, stir well, and simmer for two to three minutes. Give it time to cool.
- Roll out puff pastry using a rolling pin and dry flour on a clean surface.
