Taco Potato Samosa: A Flavorful Fusion of Pakistani Spices and Mexican Flair

Potato Filling Ingredients: 

• 4-5 boiled medium potatoes 
• 1 tsp crushed red chilies
• 1 tsp salt or to taste
• ½ tsp crushed coriander seeds
• 1 tsp cumin powder
• 1 tsp chicken powder (optional)
• ½ tsp chaat masala
• 2 tsp cornflour
• 2-3 tps freshly chopped coriander

Dough Ingredients 

• 2 cups sifted all-purpose flour 
• 1 cup sifted maize flour 
• 1 tsp salt or to taste
• 1 tsp cumin seeds 
• ½ tsp carom seeds
• 3 tsp melted butter 
• 1 & ½ cup water 
• 1 egg whisked 
• Sesame seeds or breadcrumbs 
• Oil for air frying 

Directions:

Make the potato filling:

• Use a masher to thoroughly mash the boiling potatoes in a bowl.
• Add salt, chaat masala, cornflour, fresh coriander, cumin powder, chicken powder (if using), crushed red chilies, and coriander seeds. 
• Mix well and set aside.

Taco dough preparation:

• All-purpose flour, maize flour, salt, cumin seeds, and carom seeds should be combined in a bowl. Mix thoroughly.
• Add clarified butter should, then crumble the mixture.
• Gradually add water while mixing well to create dough.
• The dough should rise for 30 minutes after being covered and oiled with melted clarified butter.
• Do sufficient kneading to make the smooth dough.
• Make two halves of the dough. Roll out one portion with a rolling pin after forming a smooth ball out of it.
• Cut the dough into rounds using a round cutter (3.5 inches in diameter).
• The rounds should be forked, then brushed with beaten egg.
• Cook the taco samosas in a hot air fryer at 180°C for 18 to 20 minutes, turning them over after 10 minutes.
• Serve the mouthwatering Desi-Mexican combination with your favorite chutney and sauce.

Chicken Patties: A Delectable Combination of Juicy Chicken with Fine Seasonings

Ingredients:

• 1 tps ginger-garlic paste
• Lemon juice, 2 teaspoons
• Tandoori masala, 1 & 1/2 teaspoons
• Chicken fillet, 300g
• Cooking oil, 2 tablespoons
• 3 tablespoons of butter
• Chopped 1 big onion 
• 1 teaspoon of crushed garlic
• 2 chopped green chilies
• 2 tablespoons of all-purpose flour
• Olper’s milk, 1/2 cup
• Olper’s cream, 1/2 cup
• 1 teaspoon of crushed red chili peppers, a teaspoon of salt, or as desired
• 1 teaspoon crushed cumin seeds
• 1 tps soy sauce
• 1/2 tsp paprika powder
• 1/2  tps spoons finely chopped fresh coriander
• Puff pastry, 500g
• A single-whisked egg

Directions:

• Combine tandoori masala, lemon juice, and ginger-garlic paste in a bowl.
• Apply the mixture to the chicken fillet, cover it, and let it marinate for 15 minutes.
• Then add a marinated fillet to a frying pan with hot cooking oil, cover with the marinated remains, and cook for 3 to 4 minutes on each side over medium heat. Cook with the lid on for 6 to 8 minutes on a low burner, then move to a high flame and cook until it dries.
• Allow the fillet to cool, then use a fork to shred it and set it aside.
• Melt butter in the same frying pan.
• Add the minced onion and cook it until it is transparent.
• Stir in the green chilies.
• Mix thoroughly after adding crushed garlic.
• Add all-purpose flour, then simmer for one minute
• Add milk and stir while cooking until thick.
• After turning off the flame, stir in the cream.
• Turn on the flame and then add salt, paprika powder, soy sauce, crushed red pepper, cumin seeds, and fresh coriander. Combine and simmer for one to two minutes.
• Add the chicken shreds, stir well, and simmer for two to three minutes. Give it time to cool.
• Roll out puff pastry using a rolling pin and dry flour on a clean surface.
• Use a circular cookie cutter to create the necessary shapes.
• To form a patty, wet the puff pastry, add the prepared chicken filling to the center, and then top with another piece of puff pastry.
• Apply egg wash to the top after sealing gently (makes 6).
• For 12 to 15 minutes, air fry at 180 °C in a preheated air fryer.
• Add tomato ketchup to serve.

Crispy Eggplant Fries: Enjoy Each Bite with Guilt-Free Crunchiness and a Hint of Health

Ingredients:

• Red chili powder, 1 & 1/2 teaspoons (or to taste)
• ½  teaspoon salt, or to taste
• Cumin powder, 1 teaspoon
• Garlic powder, 1 teaspoon
• Chaat masala, 1 teaspoon
• 100g of Kurkure chips
• 3 whole eggs
• ½  cup of all-purpose flour
• ½ a cup of rice flour
• Dried parsley, 1 teaspoon
• ½ teaspoon salt, or to taste
• 4 medium-sized eggplants
• Oil for air frying 
• Mayonnaise
• Tomato ketchup
• Fresh coriander chopped 
• Red chilies, chopped

Directions:

• Combine salt, cumin, garlic, red chili powder, and chaat masala in a bowl. Set apart.
• Set aside after finely chopping the Kurkure chips.
• In a bowl, whisk the eggs.
• Add all-purpose flour, rice flour, dried parsley, salt, and chopped Kurkure chips to another dish.
• Slice the eggplant, keeping the head whole, then remove the skin.
• Slice the eggplant into long, thin pieces.
• Over the eggplant strips, gently sprinkle the prepared seasoning.
• After coating with the flour mixture, dip the eggplant slices into the whisked eggs.
• For air-frying, cook for 10 minutes at 180°C.
• Spread tomato ketchup and mayonnaise on the fries made from eggplant. Add red chili powder and fresh coriander to the final outcome. Serve!
